Bread Machine - Sweet Almond Bread
(This makes a nice house-warming gift, "welcome neighbor" gift, or Christmas gift)

Dough                                                                               
2/3 cup warm milk (70 - 80 degrees)                   .
1 egg yolk                                                             
1/4 cup softened butter or marg.
1/4 cup applesauce, room temp.
1/3 cup sugar
1/2 tsp salt
2 - 3/4 cups bread flour 
2 - 1/4 tsps. active dry yeast                      

In bread machine pan, place dough ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 mins. of mixing; add 1 - 2 Tbs. of water or flour if needed) When cycle is completed, turn dough onto a floured surface and punch down.. Divide dough in half. Roll each portion into a 6-inch circle and place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 mins. Meanwhile, for topping, combine butter, sugar, milk, cinnamon, and salt in a small saucepan. Cook and stir over low heat until butter is melted. Simmer for 1 min. Remove from the heat; cool for 5 mins. Make a 1/4 - inch depression in the center of each loaf with the tip of a wooden spoon. Brush with the butter mixture and sprinkle with almonds. Bake at 375 degrees for 18 - 20 mins. or until golden brown. Cool for 10 mins. Serve warm.

                
.Topping
1/4 cup butter or margarine
3 Tbs. sugar
1Tbs milk
1/4 tsp. ground cinnamon
1/8 tsp salt
6 Tbs. sliced almonds
Bread Machine bread - Honey Oat Bread

1cup water
2 Tbls. oil
1 tsp lemon juice
1 tsp. salt
3 Tbs. honey
1 - 1/2 Tbls. dry milk
3 cups bread flour + 1 Tbs.
3/4 cup dry oatmeal
1 - 1/4 tsp. active dry yeast
2 - 3 Tbls. unsalted sunflower seeds

Mix  ingredients in bread pan according to manufacturers  instuctions. On my machine it mixes on the "whole wheat bake", (rapid cycle).
This makes a 1 - 1/2 #  loaf


Bread Machine - Cheese Onion Bread

3/4 cup plus 1 Tbs. water
1 tsp. lemon juice
1 tsp. salt
3Tbs. sugar
3 cups bread flour
3/4 cup shredded cheddar cheese
1 - 1/2 Tbs. dried onion
1 - 1/4 tsp. active dry yeast

Put ingredients in pan, in the order that your bread machine manufacturing co. recommends.  I use the "sweet bake" cycle on my machine for this recipe. This bread smells awesome coming out of the machine!  It makes a 1 - 1/2 # loaf.
Glazed Orange Muffins

2 cups all-purpose flour
1/2 to 3/4cup sugar, depending on how sweet you like your muffins.
2 -1/2 tsps. baking powder
1/4 tsp salt
1/4 tsp. baking soda
1 large or 2 small oranges
1/4 to 1/3 cup milk as needed
1/3 cup butter or margarine, melted and cooled
1 large egg, lightly beaten
1 tsp. vanilla
1/2 cup coarsely chopped pecans, may lightly toast if desired.

Orange Glaze
finely grated zest of 1 orange
1/3 cup fresh orange juice
1/3 cup sugar

Preheat oven to 400 degrees. Spray 12 muffin cups with "Pam" or line with paper liners. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Grate the zest of the orange and juice it. Add enough milk to the orange juice to measure 1/2 cup plus 2 Tbs. and pour it into a second bowl. Add the butter, egg, vanilla, and baking soda and whisk until blended. Add the wet ingredients to the dry and combine with as few strokes as possible. Fold in the orange zest and pecans.  Spoon the batter into the prepared muffin cups, filling each one 1/2 - 2/3  full. Bake until golden and fragrant, 15 - 20 mins.  Meanwhile, prepare the orange glaze. In a small pan, bring the orange zest and juice and sugar to a boil, stirring to dissolve the sugar. Turn down the heat and let simmer until slightly thickened, 4 - 5 mins. Let cool slightly.

"Putnam City Schools" Cinnamon Rolls

Dough
2 pkg. quick active yeast
2 cups warm milk ( check back of yeast pkg. for temp.)
1/4 cup plus 1 Tbs. brown sugar
1 tsp. salt
1/4 cup margarine, softened
1  (room temp) large egg
5 cups flour

Filling
3/4  # margarine  (3 sticks)
1 -1/3 cup sugar
1 - 1/2 cup brown sugar
3 Tbs cinnamon

Dissolve yeast in warm milk. Add sugar, salt, egg and margarine, mix well. Add flour gradually (one cup at a time) mix well. Knead and let rise in warm place til double in size. Lightly oil surface and roll out dough in a 1/4- inch thick rectangle. Combine filling ingredients, mix well. Spread filling over dough with spatula. Roll dough up and slice using a thread.
Place in heavily buttered pans, leaving 1 - inch between rolls. Let rise in warm place til double in size.. Bake at 350 degrees for about 25 mins., or until nicely browned. Meanwhile, combine icing ingredients.  Remove rolls from the oven and immediately  pour icing over rolls..

Icing
2 - 1/4 cup powdered sugar
1/2 cup hot water
1 tsp. vanilla

Breads
.Cranberry Muffins

2 cups flour
1 cup sugar
1 - 1/2 Tsps. baking powder
1 tsp. ground nutmeg
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. ground ginger
1/2 tsp. salt
2 tsps. grated orange peel
1/2 cup shortening
3/4 cup orange juice
2 eggs, beaten
1 Tbs. vanilla
1 - 1/2 cups coarsely chopped cranberries
1 - 1/2 cups chopped pecans

In a large bowl, combine flour, sugar, baking powder, nutmeg, cinnamon, baking soda, ginger, salt, and orange peel. Cut in shortening until crumbly. Stir in orange juice, eggs, and vanilla just until moistened. Fold in cranberries and nuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375 degrees for 18 - 20 minutes or until golden brown.   Yield:  1 - 1/2 dozen
